Easy, Healthy and Yummy Recipe: Citrus Chicken Medley

This last Sunday’s creation from Friend Food’s first “meeting.” 🙂

Serves 6 people.  Easily shrinks down to suit other numbers.  Split portions into thirds to match number of diners.

6 boneless, skinless chicken breasts, diced
8 oz. fresh mushrooms, sliced
1 lb. fresh green beans, snapped and in pieces
1 large green bell pepper, diced
1 large red bell pepper, diced
8 oz. canned chunk pineapple with juice
7 oz. orange juice
4 Tbsp. brown sugar
3 Tbsp. Italian seasoning
4 Tbsp. paprika
3 Tbsp. chopped onion
2 Tbsp. garlic powder
3 cups dry brown rice

Prepare rice as directed.

Place chicken, pineapple and orange juice in pan.  Stir regularly, cooking until chicken is thoroughly cooked, but not dry.  Stir in all spices.  Add all vegetables.  Keep on simmer until rice is ready to eat.  Dish out over rice, and enjoy. 🙂
