Mmmmmm…my latest invention: super tasty, healthy and low-calorie (about 300 calories per serving).
4 red-skin potatoes (baked)
2 cans of diced tomatoes
1 can of lower sodium black beans (thoroughly drained and rinsed)
2 small onions
3 peeled cloves of fresh garlic
1 medium avocado
2 Tbsp. cumin
2 Tbsp. paprika
1 Tbsp. thyme
2 tsp. ground ginger
Cook onion and garlic on high temperature until sizzling. Add diced tomatoes, avocado and beans. Finely grate half of the lime skin into pan. Juice lime into pan. Add spices. Stir constantly for 2 minutes, then let simmer for 4 minutes. Serve over baked potatoes, and enjoy!
