My Yummiest (Healthy & Low Calorie) Recipe Yet: “Lentil Stuff”

Why “stuff”? Well, simply put, it’s because I don’t know what else to call it!  But you should note that this was so good that we ate it the next day, too!

Low calorie, healthy and super yummy!

Makes 8 servings.

1/2 cup dry lentils
8 mini peppers or 2 medium bell peppers
2 cans black beans (thoroughly drained and rinsed)
2 Tbsp. garlic powder
1 Tbsp. curry powder
2 Tbsp. cumin
2 Tbsp. paprika
1 Tbsp. dried onion flakes
1 cup water
1 cup dry oats
2 Tbsp. pure olive oil (or canola oil)

Prepare lentils as directed on package.  In separate pan (skillet), add black beans and peppers with 1/2 cup water.  Once sizzling, add spices and the rest of water.  Keep simmering until lentils are ready.  Once lentils are done cooking, drain any excess water and pour into a bowl with dry oats and cooked beans & peppers mixture and oil.  Using a spoon, stir ingredients together until thoroughly mixed.  Form into patties or drops and fry in skillet without oil, constantly stirring, until browned.  Serve on buns, if formed into patties, or serve plain with ketchup (or 1/4 cup tomato paste with pinch of sea salt, garlic powder and basil).
