New Recipe: Coconut Flour Shortcake–Ish Dessert

Today, I felt like baking something.  So, I pulled out all the ingredients I could find in the house that might offer some kind of dessert, and this is what I came up with.

Coconut Flour Shortcake-Ish

2 cups coconut flour1 tablespoon ground cinnamon
1/2 cup sugar
3/4 cup olive oil
2-3 cups water (to desired texture)
1/2 tablespoon baking powder
1/2 tablespoon strawberry extract (could use lemon, vanilla or other extract)
1 teaspoon nutmeg
2 handfuls of nuts (optional)–pecans or walnuts best

Combine dry ingredients.  Add in oil.  Mix together.  Add extract.  Add 1 cup water.  Stir in.  Continue adding water, 1/2 cup at a time, until batter is thoroughly moist, but still thick, like cookie dough.  Add water until reaches the texture you like for shortbread.  Spread into an oven-safe greased pan/bowl.  Bake at 450 for about 10 minutes or until edges are dark brown and toothpick comes out clean from center.
