Pinto Bean Chicken Salad


1 cup dried pinto beans
3 celery stalks (large, chopped)
1 chicken breast (cooked, chopped)
1-2 handfuls of raisins
6-8 mushrooms (raw, chopped)
1/2 shredded cheddar cheese (optional)
Dressing–your choice: if you prefer a more sweet flavor, go for something like Poppy Seed, Honey Mustard or Vidalia Onion vinaigrette.  For a more savory taste, go with Caesar or Peppercorn Ranch

Follow the directions for preparation of the dried beans.  Once beans are prepared, add the celery (chopped), chicken breast, raisins, mushrooms (chopped) and stir together.  Once these ingredients are thoroughly mixed, add 2 tablespoons of the dressing and mix all ingredients together again.  Continue adding dressing 1/2 tablespoon at a time, thoroughly mixing in, until you’re satisfied with the consistency of the salad.  Chill for 3 hours for best flavor, but can be served immediately after being made.
